Appellation: Rivesaltes Ambré
Varieties: Very old white and grey Grenache (50%) and old Macabeu (50%). Yields inferior to 20hl/ha.
Terroir: very stony limestone located at the foot of the cliffs.
Harvest: manual
Vinification: traditional in white followed by a mutage (addition ol alcohol) at middle fermentation. Ageing seven years in barrels (220L).
