Growing methods:
Biodynamic application, infusions and decoctions of plants according to the rhythms of the biodynamic calendar. DEMETER and BIODYVIN certification
Harvest:
Manual by successive sorting, selection of golden grapes and exclusion of botrytis. Harvested in 12 kg boxes.
Winemaking:
Cold settling of the must after 24 hours, beginning of fermentation in indigenous yeast in stainless steel vats then fermentation in Burgundy barrels of 3 to 5 wines.
Maturing:
18 months of which 12 were then 6 months in vats.
